  • 1 tablespoon fajita seasoning
  • 2 tablespoons water
  • 1 pound boneless skinless chicken breasts or thin-sliced cutlets
  • ¼ cup olive oil plus 1 tablespoon more for cooking
  • 1 tablespoon freshly squeezed lime juice
  • 2 tablespoons high-heat cooking oil like avocado or peanut oil
  • 2 medium yellow onions sliced thin
  • 3 bell peppers seeded and sliced ¼ inch thick
  • 3 cloves garlic minced
  • kosher salt to taste
  • unsalted butter
  • tomato paste
  • low sodium soy sauce optional
  • warm flour tortillas for serving
  • Greek yogurt or sour cream or Mexican crema optional toppings
  • lime wedges for serving

Instructions

  • Mix fajita seasoning with the water to make a marinade.
  • Place chicken in a resealable bag or shallow dish. Pour the marinade over and let sit for at least 15 minutes.
  • Heat a tablespoon of olive oil in a skillet over medium-high heat. Cook chicken 5-7 minutes on each side until cooked through.
  • Remove chicken and set aside.
  • Add high-heat oil to the same skillet. Sauté sliced onions with half the kosher salt for 3-4 minutes.
  • Add bell peppers and remaining salt. Cook for 5-7 minutes until tender yet crisp.
  • Slice cooked chicken thin. Push veggies to one side of skillet, melt butter on the empty side, then stir chicken back in until mixed.
  • Drizzle lime juice over top and serve hot with flour tortillas and toppings as desired.

Notes

Wrap tortillas in a damp cloth and microwave in short bursts to keep them soft and warm. Store leftovers in airtight containers or freezer bags for easy reheating any night of the week.
