Equipment

  • 1 mixing bowls
  • 1 whisk
  • 1 electric mixer or hand mixer
  • 1 rubber spatula
  • 1 PVC piping rings or egg rings
  • 1 non-stick skillet
  • 1 lid for skillet
  • 1 measuring cups and spoons

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 3 large eggs, separated
  • ¾ cup milk
  • ½ teaspoon vanilla extract
  • 1 tablespoon unsalted butter (for greasing)
  • to taste Maple syrup or toppings of choice

Instructions

  • In a mixing bowl, whisk together the flour, sugar, baking powder, and salt until combined.
  • In another bowl, separate the egg yolks from the egg whites. Add the milk and vanilla extract to the egg yolks and whisk until smooth.
  • Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.
  • In a separate bowl, beat the egg whites using an electric mixer until stiff peaks form (usually about 3-5 minutes).
  • Carefully fold the beaten egg whites into the batter in three additions, being gentle to maintain the fluffiness.
  • Heat a non-stick skillet over low heat and lightly grease the bottom with butter.
  • Use the PVC rings to form circular shapes for the pancakes in the skillet. Fill each ring with the batter until about halfway full.
  • Cover the skillet with a lid and cook for about 4-5 minutes on low heat.
  • After 4-5 minutes, carefully flip the pancakes using a spatula. Cover and cook for an additional 4-5 minutes until golden brown and fluffy.
  • Remove the pancakes from the skillet and repeat with any remaining batter.
