- 2 cups fresh spinach about 60g
- 1 cup cream cheese 240g
- 1 cup sour cream 240g
- 1 cup shredded Monterey Jack cheese 100g
- 1 clove garlic, minced
- 1 teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon crushed red pepper flakes optional
Wash the fresh spinach thoroughly and chop it coarsely. Set aside.
In a large skillet over medium heat, add the chopped spinach and sauté for about 3-4 minutes until wilted. Remove from heat and let cool slightly.
In a mixing bowl, combine the cream cheese, sour cream, shredded Monterey Jack cheese, minced garlic, onion powder, salt, pepper, and crushed red pepper flakes if using. Mix until well combined.
Add the sautéed spinach to the cheese mixture and stir until evenly incorporated.
Transfer the dip to a baking dish if desired. If you prefer baked dip, preheat your oven to 350°F (175°C) and bake for 15-20 minutes until bubbly and golden on top.
If you do not wish to bake, simply serve the dip warm or at room temperature with tortilla chips or fresh vegetables.
You can customize this dip by adding other ingredients such as diced jalapeños for heat or chopped artichokes for added flavor.
For a healthier version, consider using Greek yogurt instead of sour cream.
This dip is great served warm but can also be enjoyed cold.
