Preheat your oven following the oven fries instructions. Spread the fries on a baking sheet. Spray with oil and toss with Cajun seasoning.
Bake fries in the oven until crispy and golden, following package instructions for timing.
Dice the red bell pepper and set it aside.
Melt butter in a saucepan over medium heat, stir in plain flour to make a roux.
Gradually whisk in the milk, cooking for about 5 minutes until thick and creamy.
Remove from heat and stir in cheddar, mozzarella, red bell pepper, and jalapenos.
Ladle cheese sauce over fries and return to oven for about 5 minutes to melt.
Notes
Cool leftovers completely and store properly to enjoy crispy fries later. Adjust spice levels with jalapenos according to taste.
