  • 3 tablespoons Greek yogurt
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 tablespoon red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon paprika
  • salt and pepper to taste
  • 4 pita breads warmed
  • 1 cup shredded lettuce
  • 0.5 cup diced tomatoes
  • 0.25 cup sliced red onion
  • 0.5 cup tzatziki sauce

  • Mix Greek yogurt, olive oil, garlic, red wine vinegar, lemon juice, oregano, cumin, paprika, salt, and pepper in a bowl until well combined.
  • Add chicken thighs and coat evenly with marinade. Cover and refrigerate for at least 30 minutes.
  • Set pressure cooker to saute mode, add a small amount of olive oil, and lightly sear marinated chicken to get slight char marks.
  • Seal lid and cook on high pressure for 10 minutes.
  • Let pressure release naturally for 10 minutes before opening the lid.
  • Slice cooked chicken into strips and rest briefly before assembling.
  • Warm pita breads and fill with chicken, lettuce, tomato, red onion, and tzatziki sauce. Wrap and serve.

Notes

For best flavor, marinate chicken overnight. Store leftovers in separate containers to prevent sogginess and reheat gently to maintain tenderness.
