Ingredients
  

  • 2 cans sweet corn 15 oz each, drained.
  • 1 can cream-style corn 15 oz.
  • 1 cup sour cream
  • ½ cup melted butter
  • 1 box cornbread mix 8.5 oz.
  • 1 cup shredded cheddar cheese
  • ¼ cup chopped green onions optional.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the drained sweet corn, cream-style corn, sour cream, and melted butter. Mix until well combined.
  • Stir in the cornbread mix until just combined. Do not overmix.
  • Fold in the shredded cheddar cheese and chopped green onions if using. Season with salt and pepper to taste.
  • Pour the mixture into a greased 9x13-inch baking dish, spreading it evenly.
  • Bake in the preheated oven for 45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  • Allow the casserole to cool slightly before serving.

  • Store leftovers in the refrigerator for up to 3 days and reheat in the oven or microwave.
