Ingredients
  

  • 1.5 pounds boneless, skinless chicken breasts Cut into bite-sized pieces.
  • 3 tablespoons vegetable oil
  • 1 medium onion Diced.
  • 3 cloves garlic Minced.
  • 1 inch ginger Minced.
  • 1 cup peanut butter Smooth.
  • ¼ cup soy sauce
  • ¼ cup honey
  • 1 tablespoon rice vinegar
  • ¼ cup chicken broth Or water.
  • ½ teaspoon red pepper flakes Optional.
  • ¼ cup chopped green onions For garnish.
  • ¼ cup crushed peanuts For garnish.

Instructions
 

  • Heat the vegetable oil in a large skillet or wok over medium-high heat.
  • Add the diced onion to the skillet and sauté until translucent, about 2-3 minutes.
  • Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
  • Add the chicken pieces to the skillet, cooking until they are browned and cooked through, approximately 5-7 minutes.
  • In a bowl, mix the peanut butter, soy sauce, honey, rice vinegar, chicken broth, and red pepper flakes (if using) until well combined.
  • Pour the peanut sauce over the cooked chicken and stir until all pieces are coated. Let it simmer for about 3-4 minutes to heat through.
  • Remove from heat and garnish with chopped green onions and crushed peanuts before serving.

Notes

Adjust the amount of soy sauce and honey to suit your taste preferences.
Serve over steamed rice or noodles for a complete meal.
You can add vegetables like bell peppers or broccoli for extra nutrition and color.
