  • 1 tablespoon Olive oil
  • ½ cup Onion chopped
  • 2 ½ cups Cubed potatoes Russet preferred
  • 1 lb Ground beef
  • 1 packet Low Sodium Taco Seasoning
  • 10 oz Diced tomatoes with green chiles canned
  • 1 cup Shredded cheese Cheddar or blend

Instructions

  • Heat your pressure cooker on sauté mode and add olive oil. Add chopped onions and cook until translucent.
  • Add ground beef, brown it, and drain excess fat.
  • Add taco seasoning and diced tomatoes with green chilies.
  • Add cubed potatoes and stir everything nicely.
  • Seal the cooker, set valve to sealing position, and cook under pressure for 8 minutes.
  • Release pressure slowly, open lid, and stir. Sprinkle cheese on top.
  • Use sauté or bake setting to melt cheese for 3-5 minutes.
