In a mixing bowl, crush 20 Oreo cookies into fine crumbs. Leave 4 cookies whole for decoration.
Add the softened cream cheese to the crushed Oreo cookies. Mix until well combined and the mixture holds together.
Using your hands, roll the Oreo and cream cheese mixture into 1-inch balls and place them on a baking sheet lined with parchment paper.
Once all the mixture is formed into balls, place the baking sheet into the refrigerator for 30 minutes to set.
While the balls are chilling, melt the white chocolate chips in a microwave-safe bowl in 20-second intervals until smooth, stirring in between.
Divide the melted chocolate into separate bowls. Add a few drops of food coloring gel to each bowl, creating a variety of colors.
Dip each chilled Oreo ball into one of the colored chocolates, making sure they are fully coated. Use a spoon to help with the coating if needed.
After coating each ball, place it back on the parchment-lined baking sheet. Before the chocolate sets, decorate with candy sprinkles and place a mini candy egg on top of some for added fun.
Let the decorated cookies cool at room temperature until the chocolate hardens, or place them back in the refrigerator for quicker setting.
