Ingredients
  

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chocolate candy (such as M&M's in pastel colors) For an Easter theme.
  • ½ cup sweetened shredded coconut Optional.

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper if desired.
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In a separate bowl, whisk together the rolled oats, flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in the chocolate candies and shredded coconut (if using).
  • Using a cookie scoop or tablespoon, drop rounded balls of cookie dough onto the prepared baking sheet, leaving space between each cookie.
  • Bake in the preheated oven for about 12 minutes or until the edges are lightly golden.
  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For added festive flair, you can use various types of chocolate candies in pastel colors for an Easter theme.
Store the cookies in an airtight container at room temperature for up to one week.
You can freeze the cookie dough in advance; just scoop out the dough onto a baking sheet, freeze until solid, then transfer to a freezer bag. When ready to bake, place the frozen dough balls directly onto a baking sheet and increase the baking time by a few minutes.
