Ingredients
  

  • 1.5 cups graham cracker crumbs
  • 0.5 cup unsalted butter Melted.
  • 2 cups cream cheese Softened.
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup fresh fruit or chocolate shavings For topping (optional).

Instructions
 

  • In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated and the mixture resembles wet sand.
  • Press the graham cracker mixture evenly into the bottom of the 9-inch springform pan to form a crust. Use the back of a measuring cup to pack it down tightly. Place it in the refrigerator to set while you prepare the filling.
  • In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2 minutes.
  • Add in the powdered sugar and vanilla extract. Mix until fully combined and smooth.
  • In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the whipped cream.
  • Pour the cheesecake filling over the prepared crust, spreading it evenly. Smooth the top with a spatula.
  • Cover the cheesecake with plastic wrap or aluminum foil and refrigerate for at least 4 hours, or until set (preferably overnight).
  • Once set, carefully remove the cheesecake from the springform pan. Top with fresh fruit or chocolate shavings if desired.
  • Slice and serve chilled. Enjoy your Easter celebration!
