Ingredients
  

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter Melted.
  • ¼ cup granulated sugar
  • 16 oz cream cheese Softened.
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup mixed berries Strawberries, blueberries, raspberries.
  • fruit glaze Optional: for shine.

Instructions
 

  • In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix well until all crumbs are evenly coated.
  • Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Set aside.
  • In another bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
  • In a separate bowl, whisk the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture using a rubber spatula until no streaks remain.
  • Pour the cheesecake filling over the prepared crust, smoothing the top with the spatula. Refrigerate for a minimum of 4 hours, or overnight for best results.
  • Before serving, top the cheesecake with mixed berries. If desired, brush with fruit glaze to add a shiny finish.
  • Slice into wedges and serve chilled.

Notes

For a more festive look, consider adding colorful decorations like pastel chocolate eggs or edible flowers.
This cheesecake can be made a day ahead of time and stored in the refrigerator.
