• Start with a large mixing bowl. Combine the cheesecake Jell-O instant pudding mix and the crushed pineapple. Stir it until it looks well mixed and smooth.
• Next, fold in the whipped topping gently. You wanna keep it light and fluffy, so don’t overmix or you’ll lose that airy texture.
• Once that’s combined, gently fold in 2 cups of the colored miniature marshmallows, shredded coconut, and drained fruit cocktail. This step’s crucial to keep the fluff looking colorful and treats nice and tender.
• Transfer your mixture carefully into your serving dish. Spread it out evenly so every bite has some marshmallow and fruit bits.
• Sprinkle the remaining 1 cup of miniature marshmallows across the top. This adds a soft little toasted effect after chilling.
• Place the 3 Peeps bunnies on the top. They’ll kinda melt a bit as flavors settle but don’t worry, they still look great and taste dang sweet.
• Pop the serving dish into the fridge. You gotta refrigerate at least 2 hours for all the flavors to meld together nice and slow release your patience.
• When it's time, serve it up chilled and watch everyone’s eyes light up as they dive in.
