Equipment

  • 1 muffin tin
  • 12 cupcake liners
  • 1 mixing bowl
  • 1 electric mixer or whisk
  • 1 rubber spatula
  • 1 piping bag with round tip
  • 1 toothpicks

Ingredients

  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cup milk
  • 1 cup vanilla buttercream frosting store-bought or homemade
  • pink and white candy melts for bunny ears
  • chocolate chips for eyes
  • mini marshmallows for noses

Instructions

  • Preheat the oven to 350°F (175°C). Line the muffin tin with cupcake liners.
  • In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Mix well.
  • Add the softened butter, eggs, vanilla extract, and milk to the dry ingredients. Beat with an electric mixer on medium speed for about 2 minutes until the batter is smooth and well combined.
  • Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Remove from oven and let cool completely on a wire rack.
  • Once cooled, generously frost each cupcake with vanilla buttercream using a piping bag.
  • For the bunny ears, melt pink and white candy melts according to package instructions. Pour into a piping bag and pipe out bunny ear shapes on parchment paper. Let them harden before using them as decorations.
  • Place two melted white candy ears on top of each frosted cupcake, using the frosting to hold them in place.
  • Add two chocolate chips for eyes and a mini marshmallow for the nose on each cupcake to complete the bunny look.

Notes

For a chocolate version, you can substitute half of the all-purpose flour with cocoa powder.
Decorate the cupcakes further with colorful sprinkles for a festive touch.
Store leftovers in an airtight container for up to 3 days at room temperature.
