Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until well combined.
In another bowl, mix together the milk, vegetable oil, eggs, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until smooth and fully combined.
Divide the batter evenly between the two prepared cake pans. Bake for 25 minutes or until a toothpick inserted in the center comes out clean.
Once baked, remove from the oven and let the cakes cool in the pans for about 10 minutes. Then, transfer them to a cooling rack to cool completely.
Once the cakes are cooled, use a serrated knife to level the tops if necessary. Place one cake layer on a serving platter.
Spread a layer of buttercream frosting on top of the first cake layer, then carefully place the second cake layer on top.
Use the buttercream frosting to frost the entire cake smoothly. Once covered, reserve some frosting for decorating the bunny features.
To create the bunny's face: Use the remaining frosting to pipe two large bunny ears at the top of the cake. Use the shredded coconut to cover the sides and top of the cake for a fluffy look.
Attach the marshmallows as eyes and place a pink candy for the nose. Use additional frosting to create a mouth or other decorations as desired.
If you have food coloring, you can tint some frosting for additional decorations like flowers or colorful accents around the base.
