Preheat your oven to 350°F (175°C). Grease and flour the two round cake pans.
In a mixing bowl, whisk together the flour, baking powder, and salt. Set aside.
In a separate large bowl, cream the softened butter and granulated sugar using an electric mixer until light and fluffy.
Beat in the eggs one at a time, followed by the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
Divide the batter evenly between the two prepared cake pans.
Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Once baked, let the cakes cool in the pans for 10 minutes, then transfer to a cooling rack to cool completely.
While the cakes are cooling, prepare the frosting by beating the softened butter until creamy. Gradually add the powdered sugar and mix well.
Add milk and vanilla, and beat until fluffy.
Once the cakes are completely cooled, place one layer on a serving plate. Spread a layer of white frosting on top. Place the second cake layer on top.
Frost the top and sides of the entire cake with white frosting.
Sprinkle the shredded coconut on top for the bunny's fur, if using.
To create the bunny face, use the pink frosting to pipe ears and cheeks. Place the marshmallows as cheeks, jelly bean as the nose, and chocolate chips as eyes.
Optionally, use additional frosting or decorations to create a mouth using an olive or candy.
Garnish with fresh mint leaves if desired.
