A viral one-pan dumpling bake packed with plump veggie dumplings baked in creamy red curry coconut broth. Cozy, spicy, and done in 35 minutes!

Main ingredients

  • 1 can coconut milk 13.5 fl oz / 400ml
  • 2-3 tablespoons red curry paste
  • 2 tablespoons soy sauce low sodium
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or sugar
  • 1 teaspoon sesame oil
  • 1 clove garlic large, minced
  • 1 cube ginger small, minced
  • 16-20 dumplings frozen veggie or of choice
  • 2 bulbs bok choy chopped
  • 1 zucchini or any vegetable of choice
  • Garnish ideas sesame seeds, green onions, cilantro, chili crisp oil
  • Serve with white jasmine rice or noodles

Instructions

  • Preheat your oven to 375°F (190°C).
  • Whisk coconut milk, red curry paste, soy sauce, rice vinegar, honey or sugar, and sesame oil in a bowl until smooth.
  • Mince garlic and ginger and stir into the curry mixture.
  • Chop bok choy lengthwise and arrange in baking dish.
  • Place frozen dumplings on top of bok choy in a single layer.
  • Pour curry sauce over dumplings and bok choy.
  • Cover with foil and bake for 20 minutes.
  • Uncover and bake for another 10 minutes to caramelize edges.

Notes

Serve hot over jasmine rice or noodles. Use chili crisp oil for extra flavor. Store leftovers in airtight containers for 3-4 days or freeze for longer freshness.
