Ingredients
  

  • 4 pieces boneless, skinless chicken breasts About 1.5 pounds total.
  • 1 cup heavy cream
  • 1 cup chicken broth
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning

Instructions
 

  • In a large skillet, combine the heavy cream, chicken broth, chopped sun-dried tomatoes, minced garlic, Italian seasoning, salt, and pepper. Stir well to combine.
  • Add the chicken breasts directly into the skillet, making sure they are submerged under the sauce.
  • Bring the mixture to a gentle simmer over medium heat, then cover the skillet with a lid.
  • Cook for about 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  • Once the chicken is done, remove it from the skillet and set aside on a plate.
  • Stir in the grated Parmesan cheese into the sauce, and let it simmer for an additional 2-3 minutes until creamy and thickened.
  • Return the chicken to the skillet and coat it with the creamy sauce.
  • Serve hot, garnished with fresh basil if desired.
