24ozboneless skinless chicken thighs or breaststrimmed of fat
110.5 oz cancream of chicken soupor cream of mushroom

First, toss the chicken into your pressure cooker. No need to fuss, just lay those thighs flat. Spoon the cream of chicken soup all over the top to cover that meat good.
Next up, seal the lid and lock that sealing ring in place. Set your cooker to high pressure and wait for that satisfying valve hiss. Let it cook for about 10 minutes—that’s when the chicken gets tender and juicy.
After cooking, do a natural release. This step’s important so the steam kinda settles and the chicken stays moist. Open the lid once the pressure is fully released and safe.
Now break up or shred the chicken right in the pot. Stir in the sour cream and any seasonings you want like garlic or onion powder. If you added veggies, fold them in here. Taste test and add salt and pepper if needed.
Transfer your creamy chicken mixture into a greased 9x13 baking dish. Sprinkle half of the shredded cheese on top and spread evenly. Then add the rest of your chicken layer, cheese again, and finish with the crushed Ritz crackers or panko on top.
Pop the casserole into a 350°F oven for about 25-30 minutes. You’ll spot when that top turns golden brown and bubbly. That’s your dinner telling you it’s ready!
