Ingredients
  

  • 2 cups uncooked pasta elbow macaroni or rotini
  • 1 cup dill pickles diced
  • ½ cup red onion finely chopped
  • ½ cup shredded carrots
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tablespoon pickle juice
  • 1 teaspoon garlic powder
  • 1 teaspoon dried dill weed
  • to taste salt and pepper

Instructions
 

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente (about 8-10 minutes). Drain and rinse under cold water to cool.
  • In a large mixing bowl, combine the diced dill pickles, chopped red onion, and shredded carrots.
  • In another bowl, whisk together the mayonnaise, sour cream, pickle juice, garlic powder, dried dill weed, salt, and pepper until smooth.
  • Add the cooked and cooled pasta to the bowl with the vegetables and pour the dressing over the top.
  • Gently toss all the ingredients together until evenly coated.
  • Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
  • Serve chilled, and enjoy!

Notes

Feel free to customize this salad by adding ingredients such as diced bell peppers, hard-boiled eggs, or cooked bacon for extra flavor and texture. For a lighter version, you can substitute Greek yogurt for half of the mayonnaise.
