Ingredients
  

  • 4 fillets salmon 6 ounces each
  • 2 tablespoons Dijon mustard Adjust amount based on preference for tanginess
  • 2 tablespoons plain Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • to taste salt
  • to taste pepper
  • fresh parsley for garnish (optional)
  • lemon wedges for serving

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine Dijon mustard, Greek yogurt, lemon juice, lemon zest, minced garlic, salt, and pepper. Whisk until smooth and well incorporated to create the Lemon Dijon Sauce.
  • Place the salmon fillets in a baking dish. Drizzle olive oil over the fillets and season with additional salt and pepper.
  • Spoon the Lemon Dijon Sauce evenly over the salmon fillets, ensuring they are well-coated.
  • Bake the salmon in the preheated oven for about 15 minutes, or until the fish flakes easily with a fork.
  • Once cooked, remove the salmon from the oven. Garnish with fresh parsley and serve with lemon wedges on the side.
  • While the salmon is baking, you can prepare any side dishes or vegetables as desired.

Notes

You can adjust the amount of Dijon mustard based on your preference for tanginess.
Serve with a side of steamed vegetables or a fresh salad for a complete meal.
Leftover salmon can be stored in an airtight container in the refrigerator for up to 2 days.
