Ingredients
  

  • 1 pound Italian sausage sweet or spicy
  • 1 cup long-grain white rice
  • ½ cup diced onion
  • ½ cup diced bell pepper any color
  • ½ cup peas fresh or frozen
  • 2 cloves garlic minced
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste pepper
  • for garnish fresh parsley optional

Instructions
 

  • Heat the olive oil in a large skillet over medium heat.
  • Remove the sausage from its casing and add it to the skillet. Use a spatula to break it into small pieces as it cooks. Sauté for about 5-7 minutes, or until browned and cooked through.
  • Add the diced onion, bell pepper, and minced garlic to the skillet. Stir and cook for another 3-4 minutes until the vegetables are softened.
  • Stir in the rice, dried oregano, salt, and pepper. Cook for 1-2 minutes to toast the rice lightly.
  • Pour in the chicken broth and bring the mixture to a boil.
  • Once boiling, reduce the heat to low, cover the skillet, and let it simmer for about 20 minutes, or until the rice is tender and has absorbed all the liquid.
  • Stir in the peas during the last 5 minutes of cooking to heat them through.
  • Once done, remove from heat. Fluff the rice with a fork and garnish with fresh parsley if desired.

Notes

You can substitute the Italian sausage with turkey sausage or chicken sausage for a leaner option.
Feel free to add other vegetables like corn, zucchini, or carrots according to your preference.
This dish can be stored in the refrigerator for up to 3 days and reheats well in the microwave or on the stovetop.
