This spicy Sichuan-style Dan Dan noodle dish combines creamy sesame sauce, tender pork, and crunchy peanuts for a savory mouth-tingling experience, all made easy in your home kitchen.

Marinate your ground pork with light soy sauce and Shaoxing rice wine. Let it sit for 10 minutes to soak in all that flavor.
Heat 1 tablespoon oil in a skillet over medium heat, toss in the pork, and cook till it’s browned and crispy. Stir so it doesn’t stick.
Remove pork from skillet and set aside. Add remaining oil, stir-fry the ginger until fragrant, about 30 seconds. Add Ya Cai and chili flakes, stir for another minute, then remove from heat.
In a small bowl, mix the sesame paste and water until creamy.
Add garlic, soy sauce, vinegar, Sichuan pepper, chili oil and a pinch of sugar to the paste mixture. Stir to combine.
Cook your noodles following the package directions. Add leafy greens at the end. Drain and rinse briefly under cold water.
Divide sauce between serving bowls. Place noodles and vegetables in each, then top with pork and peanuts.
Garnish with chopped scallions. Mix before eating and enjoy!
Notes
Store extra pork and sesame sauce in the fridge for up to 3 days. Keep noodles and leafy greens separate for best texture. Freeze leftovers if needed.
