Ingredients
  

  • 1 lb ground turkey or beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 cup frozen corn
  • 1 cup frozen mixed vegetables (peas, carrots, etc.)
  • 1 can (15 oz) coconut milk
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • to taste salt
  • to taste pepper
  • 32 oz frozen tater tots (gluten-free)

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • In a large skillet over medium heat, add the ground turkey or beef. Cook until browned, breaking it up with a spoon as it cooks, about 5-7 minutes.
  • Add the chopped onion and garlic to the skillet. Sauté for another 3-4 minutes until the onion is translucent.
  • Stir in the red bell pepper, corn, mixed vegetables, coconut milk, thyme, paprika, salt, and pepper. Cook for 5-7 minutes until heated through and well combined.
  • Transfer the meat and vegetable mixture into a 9x13 inch baking dish, spreading it evenly.
  • Top the mixture with the frozen tater tots, arranging them in a single layer.
  • Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and crispy.
  • Remove from the oven and let it cool for a few minutes before serving.

Notes

Feel free to customize the vegetables according to your preference. Leafy greens like spinach or kale can also be added for extra nutrients.
To enhance flavor, consider adding your favorite dairy-free cheese on top before the tater tots for a cheesy taste without the dairy.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and can also be frozen for up to a month. Reheat in the oven for best results.
