Curried Butternut Squash Soup in Your Pressure Cooker

  • 2 pounds Butternut squash peeled and diced into ½ to ¾ inch cubes
  • 1 tablespoon Extra virgin olive oil for sautéing
  • 1 teaspoon Butter
  • 1 Yellow onion large, finely chopped
  • 2 teaspoons Yellow curry powder
  • 1 teaspoon Whole mustard seeds or ¼ teaspoon ground mustard
  • 1 dash Ground cumin
  • 1 tablespoon Fresh ginger minced
  • 4 cups Chicken stock homemade or store-bought
  • 1 teaspoon Salt plus more to taste
  • ½ cup Sour cream or plain yogurt for swirling in
  • ¼ cup Fresh cilantro chopped, or substitute parsley

  • Heat 1 tablespoon of olive oil and the teaspoon of butter in your pressure cooker pot over medium heat. Let the butter melt and swirl around.
  • Throw in your chopped onion. Cook it till it’s translucent and soft, about 5 minutes or so. You wanna bring out that sweetness before adding spices.
  • Sprinkle in 2 teaspoons curry powder, 1 teaspoon mustard seeds, a dash of cumin, and the minced ginger. Stir for about a minute till it smells fragrant and warm.
  • Add the diced butternut squash into the pot. Stir around so all those spices coat the cubes nicely.
  • Pour in 4 cups of chicken stock and sprinkle in 1 teaspoon salt. Give it a quick stir and shut the lid tight.
  • Set your pressure cooker to high and cook for about 8 minutes. After it’s done, let it do a slow release for about 10 minutes to keep it nice and tender.
  • Carefully do a quick release for any leftover steam using your steam cues so you can safely open the lid.
  • Use an immersion blender right in the pot to purée the soup until smooth. If you don’t have one, blend in batches in your countertop blender. Taste it and add more salt if you gotta.

Notes

Top with a swirl of sour cream or yogurt and sprinkle with fresh cilantro for added flavor and appeal. Serve with crusty bread if desired.
