Ingredients
  

  • 1 lb ground beef
  • 4 medium potatoes, diced (about 2 lbs or 900 g)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups half-and-half
  • 1 cup frozen corn
  • 1 cup shredded cheddar cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

  • In a large skillet over medium heat, brown the ground beef until it’s fully cooked, breaking it apart with a spatula. Drain excess fat and set aside.
  • In the crockpot, add the diced potatoes, onion, and minced garlic. Stir to combine.
  • Pour in the beef broth and add the browned ground beef to the crockpot. Stir in the thyme, salt, and pepper.
  • Cover the crockpot and cook on low for 6 hours or high for 3 hours, until the potatoes are tender.
  • About 30 minutes before serving, stir in the frozen corn and half-and-half, then cover and continue to cook.
  • Just before serving, stir in the shredded cheddar cheese until melted and well combined.
  • Serve hot, garnished with additional cheese if desired.

Notes

You can use any type of cheese you prefer for added flavor.
This soup can be stored in the fridge for up to 3 days or frozen for later use.
Add chopped green onions or croutons as a topping for added texture.
