- 6 breasts boneless, skinless chicken Approx. 2.5 lbs
- 1 cup chicken broth Or stock
- 1 medium onion Diced
- 3 cloves garlic Minced
- 2 teaspoons dried Italian seasoning
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup diced tomatoes Canned or fresh
- 1 cup sliced bell peppers Any color
- 1 tablespoon olive oil Optional for sautéing
Prepare the Ingredients: Dice the onion and bell peppers, and mince the garlic.
Sauté (Optional): In a skillet, heat the olive oil over medium heat. Sauté the onion and garlic for about 3 minutes until fragrant. This step enhances the flavor but can be skipped if you prefer.
Place the chicken breasts flat at the bottom of the crockpot.
Sprinkle the Italian seasoning, paprika, salt, and black pepper over the chicken. Add the sautéed onions and garlic if using.
Pour the chicken broth over the chicken and add the diced tomatoes and bell peppers on top.
Cover the crockpot and cook on low for about 6 hours or high for 3 hours. The chicken should be fully cooked and tender.
Once done, shred the chicken with two forks directly in the crockpot or serve whole. Enjoy with rice, pasta, or on a bed of greens.
Leftovers can be stored in the refrigerator for 3-4 days.
