boneless skinless chicken breasts

chicken stock

mini bell peppers
sliced into rounds

heavy cream

parmesan cheese

fettuccine pasta
or other long noodles

Instructions
Place chicken breasts in the crock pot.
Sprinkle Cajun seasoning over the chicken evenly.
Pour chicken stock and hot sauce over the chicken.
Top with diced onion and sliced mini bell peppers.
Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours.
Remove chicken, shred with forks, and return to crock pot.
Add heavy cream and half the parmesan cheese. Stir to combine.
Boil pasta separately until very al dente, then drain and add to pot.
Stir everything together and cook 15-30 min more to absorb sauce.
Top with remaining parmesan and dried parsley before serving.
Notes
Use pre-shredded parmesan for less prep. Freeze leftovers up to 2 months. Add milk or broth when reheating for best texture.
