Ingredients
  

  • 1.5 pounds beef chuck roast, cut into 1-inch cubes
  • 1 tablespoon olive oil Optional, for browning.
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 2 tablespoons soy sauce
  • to taste salt and pepper
  • 3 cups egg noodles
  • fresh parsley, chopped For garnish.

Instructions
 

  • If desired, in a skillet over medium-high heat, heat the olive oil. Add the beef cubes and brown them on all sides. This step adds extra flavor but can be skipped for a simpler method.
  • Transfer the beef to the crockpot. Add the diced onion, minced garlic, beef broth, Worcestershire sauce, dried thyme, paprika, soy sauce, salt, and pepper. Stir to combine all ingredients.
  • Cover the crockpot and cook on low for 6 hours or on high for 3 hours, until the beef is tender.
  • About 30 minutes before serving, cook the egg noodles according to package instructions. Drain and set aside.
  • Once the beef is tender, shred it slightly with a fork in the crockpot. Stir to mix it with the gravy.
  • Serve the beef tips and gravy over the cooked egg noodles. Garnish with chopped parsley if desired.

Notes

For a thicker gravy, you can mix 2 tablespoons of cornstarch with 2 tablespoons of water and stir it into the crockpot about 15 minutes before serving.
This dish can be prepared the night before and cooked the next day for added convenience. Just keep it refrigerated before cooking.
Feel free to add vegetables like carrots or mushrooms for additional flavor and nutrition. Simply add them to the crockpot at the beginning of the cooking process.
