Crock Pot Sweet Hawaiian Chicken

Juicy chicken cooked in a sticky sweet sauce with pineapple and peppers in the crock pot for an easy tropical-inspired meal.

Ingredients

  • 2 pounds chicken thighs or breast cut into chunks
  • 1 red pepper roughly chopped
  • 20 ounce pineapple chunks with juice
  • cup soy sauce
  • cup BBQ sauce
  • ¼ cup brown sugar
  • ¼ cup orange juice
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon minced garlic
  • ½ teaspoon grated ginger
  • Green onions and sesame seeds optional garnish

  • Whisk together soy sauce, BBQ sauce, brown sugar, orange juice, sesame oil, rice vinegar, and minced garlic in a bowl.
  • Place chicken chunks and red pepper in the crock pot. Add pineapple chunks with juice.
  • Pour sauce mixture over the ingredients in the pot and gently stir to coat.
  • Cover and cook on low for 6-7 hours or high for 3-4 hours.
  • Use quick release when done cooking to safely release steam.
  • Open lid and stir contents to evenly recoat with sauce.
  • Serve hot over rice or noodles. Garnish with green onions and sesame seeds if desired.

Notes

Leftovers can be refrigerated for up to 3 days or frozen in meal portions. Great over rice or noodles. Try adding carrots or snap peas for extra veggies.
