Whisk together soy sauce, BBQ sauce, brown sugar, orange juice, sesame oil, rice vinegar, and minced garlic in a bowl.
Place chicken chunks and red pepper in the crock pot. Add pineapple chunks with juice.
Pour sauce mixture over the ingredients in the pot and gently stir to coat.
Cover and cook on low for 6-7 hours or high for 3-4 hours.
Use quick release when done cooking to safely release steam.
Open lid and stir contents to evenly recoat with sauce.
Serve hot over rice or noodles. Garnish with green onions and sesame seeds if desired.
Notes
Leftovers can be refrigerated for up to 3 days or frozen in meal portions. Great over rice or noodles. Try adding carrots or snap peas for extra veggies.
