Ingredients
  

  • 1.5 lbs boneless, skinless chicken thighs About 4 pieces.
  • 1 cup soy sauce
  • ½ cup brown sugar
  • ¼ cup bourbon
  • ¼ cup ketchup
  • 2 tablespoons minced garlic About 6 cloves.
  • 1 teaspoon ground ginger
  • ¼ teaspoon crushed red pepper flakes Adjust to taste.
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • cooked rice For serving.
  • green onions Chopped for garnish.

Instructions
 

  • Start by cutting the chicken thighs into bite-sized pieces. This will allow the flavors to penetrate the meat more effectively.
  • In a mixing bowl, combine the soy sauce, brown sugar, bourbon, ketchup, minced garlic, ground ginger, and crushed red pepper flakes. Stir until the brown sugar is dissolved.
  • Place the chicken pieces into the Crock Pot. Pour the bourbon sauce mixture over the chicken, ensuring all pieces are well-coated.
  • Cover the Crock Pot with its lid and cook on low for 6 hours or on high for 3 hours, until the chicken is cooked through and tender.
  • Once cooking is complete, mix the cornstarch and water in a small bowl to create a slurry. Stir this mixture into the sauce in the Crock Pot.
  • Let it cook on high for an additional 15-20 minutes, uncovered, to thicken the sauce.
  • Serve the Bourbon Chicken over cooked rice and garnish with chopped green onions.

Notes

For a more intense flavor, you can marinate the chicken in the sauce overnight before cooking it in the Crock Pot.
Adjust the level of heat by adding more or less crushed red pepper flakes according to your taste preferences.
This dish pairs well with steamed vegetables or a simple green salad.
