Ingredients
  

  • 4 fillets salmon 6 ounces each
  • 2 cups cooked jasmine rice
  • 2 tablespoons olive oil for frying
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup broccoli florets
  • 1 cup shredded carrots
  • 1 whole avocado sliced
  • 4 stalks green onions sliced
  • ¼ cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger
  • sesame seeds for garnish

Instructions
 

  • Cook the jasmine rice according to package instructions, usually taking about 15-20 minutes. Set aside once done.
  • In a small bowl, whisk together the soy sauce, honey, sesame oil, rice vinegar, and grated ginger to prepare the sauce. Set aside.
  • Heat the olive oil in a large skillet over medium-high heat. Season both sides of the salmon fillets with salt and pepper.
  • Place the salmon fillets in the skillet skin side down (if skin-on) and cook for about 4-5 minutes without moving them to achieve a crispy crust. Flip and cook the other side for another 3-4 minutes until the salmon is cooked through, reaching an internal temperature of 145°F.
  • While the salmon is cooking, blanch the broccoli florets in boiling water for about 2-3 minutes until bright green and tender-crisp. Drain and set aside.
  • To assemble the bowls, start with a base of jasmine rice. Top with crispy salmon, blanched broccoli, shredded carrots, and avocado slices.
  • Drizzle with the prepared sauce and sprinkle sesame seeds and sliced green onions on top for garnish.

Notes

You can customize the vegetables based on your preference, adding bell peppers, snap peas, or any other veggies you enjoy.
For an extra crunch, consider topping the bowl with crushed nori or additional sesame seeds.
Leftover salmon can be stored in the fridge for up to 2 days. Reheat gently to avoid drying it out.
