  • ¼ cup low-sodium soy sauce or tamari use tamari if you’re gluten free
  • 3 tablespoons light brown sugar to sweeten things just right
  • 1 tablespoon minced fresh ginger
  • 1 tablespoon minced fresh garlic
  • 2 tablespoons sambal oelek tweak spice level to your liking
  • 2 teaspoons toasted sesame oil brings nutty aroma
  • 2 bunches broccolini trimmed and ready to go
  • 0.5 pound ground pork plus avocado oil spray, garlic powder, kosher salt for cooking basics
  • cup cashews chopped for crunch
  • 7 ounces instant ramen noodles discard seasoning packet
  • 4 green onions sliced for fresh bits on top
  • 2 teaspoons avocado oil for cooking pork

  • Whisk together soy sauce, brown sugar, minced garlic, minced ginger, sambal oelek, and toasted sesame oil in a small bowl to make the sauce.
  • Trim broccolini ends and discard or compost. Spray baking sheet with avocado oil spray. Arrange broccolini and season with kosher salt and garlic powder.
  • Roast broccolini in preheated 400℉ (200℃) oven for 10 to 12 minutes until tender.
  • Heat 2 teaspoons avocado oil in a large wok or pan over medium-high heat. Add ground pork, break up with wooden spoon, and cook 8 to 10 minutes until browned and crispy.
  • Add chopped cashews to the pork and toast for about 2 minutes until fragrant.
  • Cook ramen noodles according to package directions (usually 2 to 3 minutes), then drain and discard seasoning packet.
  • Pour sauce into pork and cashew mixture, stirring until slightly thickened.
  • Add roasted broccolini and cooked noodles to the pork mixture. Toss to combine well.
  • Divide among bowls and sprinkle with sliced green onions before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Add a splash of water or broth when reheating. Freeze portions in freezer-safe containers for up to 2 months; thaw overnight before reheating.
