- 1 cup ground beef cooked and drained
- 1 cup shredded cheddar cheese
- ½ cup cream cheese softened
- ½ cup canned black beans rinsed and drained
- ¼ cup jalapeños sliced, fresh or pickled
- 1 teaspoon taco seasoning
- 12 pieces egg roll wrappers
- as needed spray or oil cooking spray for frying
- as needed for serving salsa
In a mixing bowl, combine the cooked ground beef, cheddar cheese, cream cheese, black beans, jalapeños, and taco seasoning. Mix until fully combined.
Lay an egg roll wrapper on a clean surface, with one corner pointing towards you. Place about 2-3 tablespoons of the filling mixture in the center of the wrapper.
Fold the bottom corner of the wrapper over the filling, then fold in the sides tightly. Roll the wrapper away from you to form a tight cylinder. Moisten the top corner with water to seal the egg roll. Repeat with the remaining wrappers and filling.
Preheat the oven to 400°F (200°C). Lightly grease a baking sheet with cooking spray or oil.
Place the egg rolls seam-side down on the prepared baking sheet and spray them lightly with cooking spray or oil.
Bake in the preheated oven for 20-25 minutes, or until the egg rolls are golden brown and crispy, turning them halfway through for even cooking. Alternatively, cook them in an air fryer at 380°F (193°C) for about 15-18 minutes, flipping halfway through.
Remove from the oven and let them cool slightly. Serve with salsa for dipping.
Feel free to customize the filling with other ingredients, such as corn, diced tomatoes, or different types of cheese.
For a spicier version, add more jalapeños or your favorite hot sauce to the filling.
These nacho egg rolls can also be frozen before baking. When ready to eat, bake from frozen, adding extra time as needed.
Make sure not to overfill the egg rolls to prevent leakage during cooking.
