Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Cut the salmon fillet into bite-sized cubes and set aside.
In a mixing bowl, combine the flour, salt, pepper, and paprika.
In another bowl, whisk the eggs until well combined.
Place the breadcrumbs in a separate bowl.
Dip each salmon cube first into the flour mixture, shaking off the excess, then into the egg, and finally into the breadcrumbs to coat evenly. Place the coated salmon bites on the prepared baking sheet.
In a frying pan, heat olive oil over medium heat. Once hot, add the coated salmon bites in batches, searing them for 2-3 minutes on each side until golden brown. Remove them from the pan and transfer them back to the baking sheet.
In a small bowl, mix together the honey, soy sauce, and minced garlic. Drizzle this mixture over the crispy salmon bites.
Bake in the preheated oven for 5-7 minutes until cooked through.
Garnish with chopped green onions before serving.
