The best meal ever! These crispy chicken caesar sandwiches are such a crowd pleaser. Super thin and crisp chicken cutlets are topped with caesar salad and served on brioche. Delish!

Thinly slice the chicken breasts lengthwise to make thin chicken cutlets. Season the chicken with salt and pepper.
Line a baking sheet with paper towels. Place the eggs, breadcrumbs, and parmesan in separate bowls.
Heat 1 to 2 tablespoons of olive oil in a skillet over medium heat for 5 minutes.
Dip each piece of chicken into the egg, then into the breadcrumbs. Cook each side until golden, about 3 to 4 minutes per side.
Remove chicken and place on a paper towel-lined sheet. Repeat with remaining chicken.
For the dressing, blend garlic, yogurt, parmesan, mustard, vinegar, anchovy paste, lemon juice, salt, and pepper until pureed. Stream in olive oil.
Place the romaine in a bowl, toss with salt, pepper, and a few tablespoons of dressing. Add parmesan cheeses and toss.
Assemble the sandwiches with a cutlet and a pile of caesar salad on a bun. Serve with extra salad if desired.
Notes
You can store extra dressing in the fridge for 3 to 4 days. Serve the sandwiches immediately for best taste.
