Instructions

  • Thinly slice the chicken breasts lengthwise to make thin chicken cutlets. Season the chicken with salt and pepper.
  • Line a baking sheet with paper towels. Place the eggs, breadcrumbs, and parmesan in separate bowls.
  • Heat 1 to 2 tablespoons of olive oil in a skillet over medium heat for 5 minutes.
  • Dip each piece of chicken into the egg, then into the breadcrumbs. Cook each side until golden, about 3 to 4 minutes per side.
  • Remove chicken and place on a paper towel-lined sheet. Repeat with remaining chicken.
  • For the dressing, blend garlic, yogurt, parmesan, mustard, vinegar, anchovy paste, lemon juice, salt, and pepper until pureed. Stream in olive oil.
  • Place the romaine in a bowl, toss with salt, pepper, and a few tablespoons of dressing. Add parmesan cheeses and toss.
  • Assemble the sandwiches with a cutlet and a pile of caesar salad on a bun. Serve with extra salad if desired.

Notes

You can store extra dressing in the fridge for 3 to 4 days. Serve the sandwiches immediately for best taste.
