- 1 lb salmon fillet, skin removed and cut into bite-sized pieces
- 1 cup panko breadcrumbs
- 1 cup cooked white rice (jasmine or basmati)
- ½ cup mayonnaise
- 3 tablespoons sweet chili sauce
- 1 tablespoon sriracha sauce
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon vegetable oil

- 1 green onion chopped (for garnish)

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the panko breadcrumbs, cornstarch, salt, and pepper. Toss until well mixed.
Dip each piece of salmon into the panko mixture, pressing gently to adhere the breadcrumbs to the salmon. Place the coated pieces on the prepared baking sheet.
