- 12 ounces smoked sausage, sliced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup spinach leaves, chopped Can use baby spinach.
- 1 cup cherry tomatoes, halved
- 1 teaspoon Italian seasoning
- ¼ teaspoon red pepper flakes Optional.
- Salt and pepper to taste
- Grated Parmesan cheese for serving
In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
In a skillet over medium heat, add olive oil. Once hot, add the sliced smoked sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.
In the same skillet, add minced garlic and cook for about 1 minute until fragrant. Pour in heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer.
Stir in chopped spinach, cherry tomatoes, Italian seasoning, and red pepper flakes (if using). Cook for about 3-5 minutes until the spinach is wilted and the tomatoes are soft.
