Ingredients
  

  • 4 fillets salmon About 6 oz each.
  • to taste salt
  • to taste pepper
  • 2 tablespoons olive oil
  • 4 cloves garlic Minced.
  • 1 cup cherry tomatoes Halved.
  • 1 cup fresh spinach Roughly chopped.
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • to garnish fresh basil Optional.

Instructions
 

  • Season each salmon fillet with salt and pepper on both sides.
  • Heat the olive oil in a large skillet over medium-high heat. Once hot, add the salmon fillets and cook for about 4-5 minutes on each side, or until they are golden brown and cooked through. Remove the salmon from the skillet and set aside.
  • In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  • Add the cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
  • Stir in the fresh spinach and cook until wilted.
  • Reduce the heat to medium and pour in the heavy cream, stirring to combine. Allow it to simmer for 2 minutes.
  • Stir in the grated Parmesan cheese and Italian seasoning. Cook the sauce until it thickens slightly.
  • Return the salmon fillets to the skillet, spooning the creamy sauce over them. Cook for an additional 2 minutes to heat through.
  • Serve immediately, garnished with fresh basil if desired.

Notes

You can serve this dish with cooked pasta, rice, or crusty bread to soak up the delicious sauce.
To make it lighter, you can substitute heavy cream with half-and-half or a plant-based cream alternative.
For extra flavor, consider adding capers or a squeeze of lemon juice before serving.
