  • 1 measuring cups
  • 1 measuring spoons
  • 1 mixing bowl
  • 1 spoon for stirring

Ingredients
  

  • 2 pounds boneless, skinless chicken breasts
  • 1 packet ranch dressing mix 1 oz
  • 2 cups cream of chicken soup canned
  • 1 cup cream cheese softened
  • ½ cup chicken broth
  • 1 can corn 15 oz, drained
  • 1 cup shredded cheddar cheese
  • to taste salt
  • to taste pepper
  • fresh parsley optional, for garnish

Instructions
 

  • Place the chicken breasts at the bottom of the crockpot.
  • In a mixing bowl, combine the ranch dressing mix, cream of chicken soup, cream cheese, and chicken broth. Mix until smooth.
  • Pour the mixture over the chicken in the crockpot.
  • Add the drained corn on top of the chicken mixture.
  • Cover the crockpot and cook on low for about 6 hours, or until the chicken is tender and fully cooked.
  • Once cooked, shred the chicken with two forks while still in the crockpot and stir to combine with the sauce.
  • Add the shredded cheddar cheese and mix well until melted and incorporated.
  • Taste and season with salt and pepper as needed.
  • Serve hot, garnished with fresh parsley if desired.

Notes

For a thicker sauce, you can leave the lid off the crockpot for the last 30 minutes of cooking.
This dish pairs well over rice, pasta, or with crusty bread.
You can add vegetables like bell peppers or mushrooms for extra nutrition and flavor.
Leftovers can be stored in the refrigerator for up to 3 days. Reheat in the microwave or on the stove.
