- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup chicken broth
- 1 cup heavy cream
- ½ cup sliced pepperoncini peppers jarred
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- ¼ cup grated Parmesan cheese
- as needed fresh parsley for garnish (optional)
Cut the chicken breasts into bite-sized pieces and season with salt and black pepper.
Heat olive oil in a large skillet over medium heat. Add the chicken pieces and cook for about 5-7 minutes until golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, pour in the chicken broth and bring it to a low simmer, scraping the bottom of the skillet to deglaze it.
Add the heavy cream, sliced pepperoncini peppers, garlic powder, and Italian seasoning to the skillet. Stir well to combine.
Let the sauce simmer for about 3-4 minutes until it thickens slightly, stirring often to avoid sticking.
Return the cooked chicken to the skillet and mix it well with the creamy sauce. Allow to simmer for another 2-3 minutes to heat the chicken through.
Stir in the grated Parmesan cheese until melted and well combined. Remove from heat.
Serve the creamy pepperoncini chicken skillet warm, garnishing with fresh parsley if desired.
For added flavor, you can sauté onions or bell peppers with the chicken.
This dish pairs well with rice, pasta, or a fresh salad.
Adjust the spiciness by using more or fewer pepperoncini peppers to suit your taste.
