  • 2 teaspoons olive oil
  • 4 cloves garlic minced
  • 2 tablespoons butter
  • 3 cups chicken broth or a bit more if you like it saucier
  • ½ teaspoon ground black pepper
  • ¼ teaspoon salt
  • ½ pound spaghetti
  • 1 cup Parmesan cheese grated
  • ¾ cup heavy cream
  • 1 ½ tablespoons dried parsley

  • Heat olive oil in pressure cooker or skillet over medium heat.
  • Add minced garlic and sauté 1-2 minutes until fragrant.
  • Stir in butter, then add chicken broth, salt, and pepper.
  • Add spaghetti, breaking in half if needed, press into liquid.
  • Close lid, cook under high pressure for 5 minutes, then allow natural release.
  • Open lid, return to low heat and stir in cream, Parmesan, and parsley. Cook 2-3 minutes more. Serve hot.

Notes

For a vegetarian version, use vegetable broth and substitute butter with more olive oil. Store leftovers in an airtight container and reheat with a bit of broth or cream.
