Heat your skillet up over medium-high heat, let it get nice and hot with a drizzle of your oil. You want it ready to sear.
Season your cubed steak with smoked paprika, garlic powder, onion powder, Italian seasoning, salt, and pepper. Don’t be shy with the seasoning y’all.
Plop the steak cubes in the hot pan in a single layer. Let ‘em cook for 3-4 minutes, no messin’ around, just get a good brown crust going.
Flip the steak bites, cooking for another 2-3 minutes till they hit your preferred doneness. Remember it’ll finish cooking a bit later too.
Take the steak out and set it aside on a plate. Don't worry, the flavor ain’t going nowhere.
Turn the heat down to medium, toss in the butter, and let it melt while you scrape up all that tasty browned stuff on the bottom. Then add your minced shallots and garlic.
Pour in the heavy cream, bring it to a simmer, then whisk in your freshly grated parmesan cheese till the sauce gets silky smooth. Toss the steak bites back in for 1-2 minutes to soak up all that garlic butter yum.
