Begin by cutting the chicken breast into bite-sized pieces. Season with salt and pepper.
Heat the olive oil in a large skillet over medium heat. Add the chicken pieces and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.
Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.
Stir in the heavy cream and Italian seasoning. Let the mixture simmer for about 3-4 minutes until slightly thickened.
Add the gnocchi to the skillet, stirring well to coat with the sauce. Cook according to package instructions, about 2-3 minutes, until the gnocchi float to the top.
Return the cooked chicken to the skillet and add the fresh spinach. Stir until the spinach wilts and everything is well combined.
Taste and adjust seasoning with additional salt and pepper if needed.
Serve hot, garnished with grated Parmesan cheese if desired.
