CREAMY CHICKEN AND GNOCCHI

Ingredients
  

  • 1 lb boneless, skinless chicken breast, diced
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 lb potato gnocchi
  • 1 cup heavy cream Can be substituted with half-and-half for a lighter version.
  • 1 cup fresh spinach, roughly chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese Garnish with extra Parmesan cheese if desired.

Instructions
 

  • Heat the olive oil in a large skillet over medium heat. Once hot, add the diced chicken and season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Transfer the chicken to a plate and set aside.
  • In the same skillet, add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1 minute, being careful not to burn it.
  • Pour in the chicken broth and bring it to a simmer. Add the gnocchi and cook according to the package instructions, usually about 3-5 minutes.
  • Once the gnocchi is cooked, stir in the heavy cream, cooked chicken, fresh spinach, dried thyme, and grated Parmesan cheese. Mix well and let it simmer for another 2-3 minutes until the sauce has thickened slightly.
  • Taste and adjust seasoning if necessary. Serve the creamy chicken and gnocchi hot, garnished with extra Parmesan cheese if desired.

Notes

Feel free to add other vegetables like peas or mushrooms for extra flavor.
You can substitute the heavy cream with half-and-half for a lighter version, though the sauce may be less rich.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat on the stovetop or microwave, adding a splash of broth to loosen the sauce if needed.
