Creamy Cajun Spaghetti with Chicken

This Creamy Cajun Spaghetti is packed with flavor, spice and it's super easy to make! Spaghetti, chicken, veggies, and lots of yummy spices are tossed in an addicting cream sauce that has just the right amount of spice! The best part is, it's ready in about 30 minutes!

  • 12 oz spaghetti
  • 1 lb chicken breast cut into small pieces or chicken thighs
  • 1 tablespoon olive oil or vegetable oil
  • 1 medium yellow onion chopped
  • 1-2 cups bell peppers chopped red, green or both
  • 4-5 cloves garlic minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 2 teaspoon smoked paprika divided
  • 1 ½ tablespoon flour
  • ½ cup chicken broth or stock
  • 1 ½ cups heavy cream
  • ½ cup Parmesan cheese grated
  • 1 teaspoon onion powder
  • red pepper flakes, Parmesan cheese, green onions, black pepper for garnish optional

  • Cook your spaghetti like package says until just right. Drain and set it aside but don’t rinse – we want all that starch to help the sauce stick.
  • Heat your oil in a big skillet over medium heat, then toss in chopped onion and bell peppers. Let ‘em soften up over about 5 to 7 minutes. You’ll see your kitchen start smelling amazing.
  • Add the minced garlic and stir for 1 to 2 minutes until you catch that fragrant steam cue. Watch out so it don’t burn!
  • Chicken time. Toss the pieces in the skillet and coat ‘em with 1 tablespoon Cajun seasoning, garlic powder, and 1 teaspoon smoked paprika. Cook until browned and done through about 7 to 10 minutes.
  • Sprinkle the flour over the chicken and veggies then stir it all up. This cooks for about a minute and starts thickening the sauce real nice.
  • Slowly pour in your chicken broth while you stir constantly to keep things smooth. The sauce starts to thicken, creamy goodness forming right there.
  • Toss in your cooked spaghetti and mix everything really well. Taste it for seasoning and add more Cajun or salt if it needs a little kick.
  • Finish with a sprinkle of smoked paprika on top. Let it sit on low heat a few minutes if you want before serving. Then grab a fork 'cause dinner’s done!

Notes

Store any leftovers in airtight containers right after dinner to keep the creaminess and flavor intact. Pop them in the fridge where they’ll stay fresh for about 3 to 4 days. If you wanna reheat, warm gently in a skillet over low heat or microwave with a splash of chicken broth to bring back the saucy texture. Avoid drying it out at all costs.
