Ingredients
  

  • 12 oz fettuccine pasta
  • 1 lb Andouille sausage, sliced
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced any color
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 2 teaspoons Cajun seasoning For a spicier kick, add a pinch of cayenne pepper or more Cajun seasoning.

Instructions
 

  • Begin by boiling a large pot of salted water. Add the fettuccine pasta and cook according to package instructions until al dente. Drain the pasta and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the sliced Andouille sausage and cook until browned, about 5-7 minutes.
  • Add the diced onion, minced garlic, and bell pepper to the skillet. Sauté for another 3-4 minutes until the vegetables are tender.
  • Stir in the can of diced tomatoes (with juice), heavy cream, Cajun seasoning, salt, and pepper. Allow the mixture to simmer for 5-7 minutes until slightly thickened.
  • Add the cooked fettuccine to the skillet. Toss to coat the pasta evenly in the creamy sauce.
  • Stir in the grated Parmesan cheese until melted and combined.
  • Taste and adjust seasoning if necessary. Serve immediately, garnished with chopped parsley.

Notes

For a spicier kick, add a pinch of cayenne pepper or more Cajun seasoning.
Feel free to incorporate vegetables such as spinach or mushrooms for added nutrition.
This dish makes great leftovers; simply reheat in a skillet with a splash of water or cream to regain its creaminess.
