Ingredients
  

  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup granulated sugar
  • 1 teaspoon orange zest
  • 0.5 cup orange juice freshly squeezed
  • 0.33 cup vegetable oil
  • 1 large egg
  • 1 cup fresh or frozen cranberries if using frozen, do not thaw
  • 1 cup powdered sugar for glaze
  • 2-3 tablespoons orange juice for glaze

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and flour your loaf pan or line it with parchment paper for easy removal.
  • In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In another bowl, combine the granulated sugar, orange zest, orange juice, vegetable oil, and egg. Mix well until fully combined.
  • Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix. Carefully fold in the cranberries.
  • Pour the batter into the prepared loaf pan and spread it evenly.
  • Bake in the preheated oven for about 55 minutes, or until a toothpick inserted in the middle comes out clean.
  • Once baked, remove the loaf from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
  • While the loaf is cooling, prepare the glaze by mixing the powdered sugar with 2-3 tablespoons of orange juice until smooth and drizzle-able. Adjust the consistency by adding more juice or sugar as needed.
  • Once the loaf has cooled, drizzle the glaze over the top. Slice and serve.

Notes

For added flavor, consider folding in some chopped walnuts or pecans with the cranberries.
This loaf can be stored at room temperature for 2-3 days in an airtight container or refrigerated for longer freshness.
If desired, you can substitute half of the flour with whole wheat flour for a healthier option.
