Preheat your grill or skillet to medium-high heat. You want it hot enough to get a nice sear but not burn.
In a large bowl, mix that ground beef, shredded cheddar, sour cream, and ranch seasoning. Don't over mix or the burgers get tough.
Form the mixture into 6 patties. Make a little dent in the center of each so they cook even and don’t puff up like balloons.
Place the patties on the grill and cook about 5-7 minutes each side. Use quick release if you pressure cook, so you stop exactly when they’re juicy and done your way.
During the last minute, slap a slice of cheese on each patty and close the lid to let it melt nice and gooey.
Toast the brioche buns on the grill briefly till they’re golden and slightly crisp on the edges.
Assemble time! Start with burger sauce on bottom bun, add that cheesy patty, top with caramelized onions, bacon crumbles, and pickles, then crown with the top bun. Serve hot and enjoy every bite.
