Ingredients
  

  • 1 lb ground beef
  • ½ lb ground pork
  • 1 cup breadcrumbs
  • ½ cup milk
  • ½ cup barbecue sauce Plus extra for topping.
  • ¼ cup chopped onion
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon chili powder
  • 3 large potatoes, peeled and sliced
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • ½ cup milk
  • ¼ cup butter, melted
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, milk, barbecue sauce, chopped onion, minced garlic, egg, Worcestershire sauce, salt, black pepper, smoked paprika, and chili powder. Mix until well combined.
  • Shape the mixture into a loaf and place it in a loaf pan. Top with extra barbecue sauce.
  • In a separate bowl, prepare the potato casserole by mixing sliced potatoes, sour cream, shredded cheddar cheese, milk, melted butter, garlic powder, salt, black pepper, and paprika.
  • Pour the potato mixture into a 9x13-inch baking dish, spreading evenly.
  • Place both the meatloaf and potato casserole in the oven. Bake the meatloaf for 60 minutes, and check the internal temperature; it should reach 160°F (71°C).
  • Continue baking the potato casserole for about 45 minutes, or until the potatoes are tender and the top is lightly browned.
  • Once done, let both dishes rest for 10 minutes before serving. Slice the meatloaf and serve it alongside the potato casserole.

Notes

Feel free to customize the meatloaf mix with your favorite spices or add chopped bell peppers for extra flavor.
You can prepare the potato casserole in advance and refrigerate it before baking. Just add an additional 10–15 minutes to the cooking time if baking it straight from the fridge.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
